Can I put non-alcohol gel in my hair with rollers and then dry it with a hooded dryer? I wanted to use that in place of a setting lotion.

It's a bad idea because it'll make your hair hard. Use something like elasta QP design foam. You can get a sample size from CVS for about $1.
